She is totally committed to the survival of traditional cheese-making and to introducing farmhouse cheeses to as wide a public as possible. With this in mind, Ann-Marie has chosen a traditionally made blue Stilton from Nottinghamshire; animal rennet and hand-ladled. Animal rennet gives the cheese its deep, complex, lingering flavour, and hand-ladling is crucial in creating a richly creamy texture.
